Sweet potatoes can be stored in a cool, dry location for up to two weeks. Since we are in Florida, it’s also perfectly acceptable to store in the refrigerator, but be sure they stay dry! The skin of these tubers is thin, so its ok to bake or roast with the skins on. Its not necessary to wrap in foil, just pierce with a fork and place on a cookie sheet or other oven safe pan. Bake at 400 degrees for about 45 minutes or until they are soft when you pinch them! Enjoy right out of the oven with your favorite toppings (e. butter, brown sugar or honey) or peel them for use in other recipes! Use cooked sweet potatoes in a variety of ways!
